Protein | Fibre | Iron | Magnesium
Ingredients:
1 large bag of spinach (or any leafy green veg e.g kale, silverbeet etc)
2 cloves of garlic (opt out of this if have sensitivity)
2-3tbs of pesto sauce
1/2cup pasta water
optional for added creaminess: 1/3cup ricotta or cottage cheese
Pasta - I use the GF pulse pasta from woolies for extra protein, fibre and nutrients.
Method
Bring a medium size pot of water to the boil. Add in spinach and garlic once boiled and let cook for 2-5mins until bright green.
Pour out greens & garlic in colindar, rince with cold water, squeeze out excess water.
In a blender, put greens, garlic, pesto, ricotta & cooled down past water and blend until smooth.
Pour sauce into prepared pasta, mix until combined and serve wiht some grated parmesan, cracked pepper and a squeeze of lemon juice!!
Why I love it
This pasta found me in the depths of burnout - during a time where eating nutrient dense foods was still really important to me but I felt like I had no time or energy to be in the kitchen. Soooo I decided to blend it all and mix with a pasta because when you’re really tired, all you feel like is pasta.
And the best part - it only take about 20mins to make!! Whilst the pasta is boiling, make the sauce, when the pasta is done mix it all in and then you’re done! Heaven!!
